We bought this used condo which currently has parquet floor on living and dining room.

I guess we have made a huge mistake by letting the contractor convinced us that there was no need to remove the parquet floor. Since laminate floor is already installed on living and dining room now (on top of the parquet floor), there is no way to fix it now  

On the other hand, I guess it's my fault that we didn't do enough research ...

Can I ask why it was not advisable to install laminate over the parquet?

Our current living room has some old parquet, we were hoping to install over the parquet.

However, I've read a recommendation of removing the parquet first how ever I don't understand the reasoning behind it.

I am interested in more info on this also. I am faced with a similar situation. I have a large room with oak parquet that I plan to laminate over. The parquet is glued down rather well and getting it up would be a real hassle and would leave behind lots of splintery pieces stuck to the subfloor. I plan to skim coat the whole thing with an underlayment compound if that makes a difference.

Anyone else have any insight on this issue?

You say you would never lay over parquet but what is the problem ?
What has happened .
 I have laid over tiled floors, Lino floors, Old t and g floors, Parquet floor and even Cork floors with out a problem .
